Mike tells me that Payette, named in honor of one of Idaho's rivers, has been in this downtown location for a year, and they use locally produced barley and malts for their sudsy goodness.

"Over the years I've been in business, the last 40 years, I've always had business lunches. We do business over lunch. It's a pretty standard procedure in the real work world," Francis said.
