WASHINGTON, D.C. (AP) - Maine lobster is on the menu when President Barack Obama welcomes Chinese President Xi Jinping at a White House state dinner.

Independent Senator Angus King of Maine says he asked the White House to use the state’s signature crustacean at the Friday dinner. The dish is to include butter poached Maine lobster with spinach, shiitake mushrooms and leek rice noodle rolls.

Lobster was also on the menu when former President Hu Jintao visited the White House in 2011.

The state dinner is happening on National Lobster Day. King, Republican Sen. Susan Collins and other New England senators lobbied for the creation of a day recognizing lobster earlier this year.
