HURON, S.D. (AP) - Looking for alternatives to the state fair’s deep-fried staples? Worry no more, the South Dakota State University Extension has you covered.

Registered dietitians with the SDSU Extension will be offering healthy cooking lessons during this year’s South Dakota State Fair in Huron.

Suzanne Stluka is the Extension’s Food and Families Program director. She says the fair provides an opportunity to Extension staff to share with South Dakota residents “healthy new recipes with ingredients that are trending across the United States right now.”

The classes scheduled for Sept. 2 will feature various recipes that incorporate quinoa and a recipe for avocado chocolate pudding.

Extension staff will also offer an introductory yoga class on Sept. 1.

The fair runs Sept. 1-5.
