ADVANCE FOR MONDAY OCT. 13 - In this Oct. 3, 2014 photo, Glenn Jones, a professor at Texas A&M University at Galveston, has a 1960 menu from Manuel's, which was located at 61st Street and the Beach in Galveston, Texas among his collection of menus. A restaurant menu can tell you much more than what’s for dinner, especially when the menus are more than 100 years old. They also tell the story of how certain species became so popular, they were eaten to commercial extinction and how that can be used to control invasive species.
