It looks like a food fight in Philadelphia (“When a sugar tax goes sour,” Web, March 7). The way to deal with sugar is for the federal government to come clean, and there is no way that is going to happen. Sugar consumption is just the inevitable result of decades of vilifying healthy fats and creating, subsidizing and selling a food supply that is based on three grains plus sugar deep-fried in vegetable oil. And if you ask your doctor about this and how it relates to your health, be prepared for a shock. Your doctor is trained not to have a clue.

The metabolism of sugar is now well-known. You have a glucose component that raises insulin levels and a fructose component that gets turned into saturated fat by your liver. The fat is stored and the perpetually high insulin levels create havoc throughout the body. If you keep up the intake for years, you end up with any number of chronic, potentially fatal diseases.

Of course, in the meantime your family physician is trained to turn you into a very dependable cash flow stemming from your chronic illnesses, including Type 2 diabetes, congenital heart disease, kidney disease, arthritis, non-alcoholic fatty liver, required amputations of toes and feet and of course the big one: cancer.

Passing a sugar tax is like tossing a rubber ducky to the passengers of the Titanic. The passengers must have asked themselves, How could you put so many people on such a large ship without enough lifeboats? Well, the federal government does this all the time. In fact, it’s policy and has been for decades.
